The Last Few Weeks Have Been Crazy!!!

Thank you to all who have ordered in the last few weeks.  I am doing a poor job at keeping this blog up to date but here are a few pictures of all the orders I have been working on.

Quick Freezer meals

6 meals  in the freezer


Hubby just had surgery.  He had an Ulnar nerve transposition due to an injury he sustained in 2009.
He is such a help around the house and with the kiddos, so the next month is going to be tough with him out of commission.  My mother was able to stay an extra day to help...which means I had the chance to throw together some meals for the freezer. 

The ingredients I used
3 family packs of fresh boneless skinless chicken breasts
2 red onions
3 yellow onions
2 sweet potatoes 
1 bag of whole carrots

I was able to make 6 meals that will go from the freezer to the crockpot

4 meals of Candy Chicken-I will add the 1 cup sprite when I cook it.
1 meal of Italian Chicken with Sweet Potatoes
1 meal of Ranch Salsa chicken

Italian Chicken
3-4 boneless chicken breasts
1 cup Italian dressing
1 chopped white onion
2 peeled and chunked Sweet potatoes (I chunk them big so they don't get mushy while cooking)
Cook in crock pot for 4-6 hours on low until chicken is done and serve over noodles or rice

Ranch Salsa Chicken
3-4 boneless skinless chicken breasts
1/2 cup salsa
1/2 cup ranch

Cook in crockpot 4-6 hours on low.  Serve with noodles or shred chicken after 5 hours and cook for 1 hour longer and serve in tortilla shells with cheese. 

It only took me about 1 hour to prep and freeze everything!
